Recipe: Pasta e Fagioli (Pasta and Beans)

After a few years of being spoiled by mild Winters here (felt more like Spring), Old Man Winter has come back with a vengeance and it is bitterly cold with temperatures below freezing.  Nothing like a bowl of hearty hot soup to warm you up but what to make? If you have been keeping your pantry stocked up with basic items bought on sale such as dried pasta, tomato sauce, canned beans, and chicken broth, you can make this hearty Italian soup called "Pasta e Fagioli". Pronounced "pastah eh fahzeeohl", it has been also popularly called "pasta fazool" by American-Italians.
It started off as a peasant dish in Italy using inexpensive ingredients and what better recipe to make on a shoestring budget?
You can make this strictly vegetarian by substituting vegetable broth.

Ingredients

  • 2 tablespoons vegetable oil
  • 2 sprigs fresh rosemary
  • 1 sprig fresh thyme
  • 2 dried bay leaves
  • 1 medium onion, finely chopped
  • 1 carrot, finely chopped
  • 1 rib celery, finely chopped
  • 4 large cloves garlic, chopped
  • salt and pepper
  • 2 (15 ounce) cans cannelini or kidney beans (undrained)
  • 1 cup tomato sauce
  • 4 cups chicken broth
  • 2 cups water
  • 1 1/2 cups dried pasta (traditionally ditalini is used but you can use elbow shape) 

Directions

  1. Heat a large pot over medium heat and add the oil.  Saute the herbs and chopped vegetables until soft. Season with salt and pepper.
  2. Add the cans of beans with their liquid (it will help thicken the soup), tomato sauce, broth and water. Bring to a boil over high heat and then stir in the pasta. Lower heat and allow the pasta to cook for about 8 minutes.
  3. Turn off heat and remove the herbs before serving.
  4. Serve with grated Parmesan cheese on top (optional).

Recipe: Pasta with Broccoli Rabe and Sausage


Pasta is on sale this week for 80¢ a box at my local supermarket. Italian Turkey Sausage is on sale for $2.99. Broccoli Rabe is $2.99 per pound. I already have extra virgin olive oil and garlic in my pantry so I decided to buy all these ingredients to make this popular Italian dish for about $7.
Orecchiette (Italian for "ear") is the pasta shape that is normally used for this dish. I substituted Medium Shells which is similar.





Ingredients

  • 1 large bunch of broccoli rabe (stems trimmed off and rinsed)
  • 1 pound of Medium Shell pasta
  • 3 tablespoons olive oil
  • 1 pound Italian sausage (hot or sweet, the taste is up to you) cut into bite sized pieces
  • 4 garlic cloves, peeled and chopped
  • 1 cup reserved broccoli rabe water
  • 1/4 cup grated Parmesan cheese

Directions

  1. Bring a large pot of water to the boil. Add a handful of salt and bring back to boil.
  2. Add the broccoli rabe and cook for a minute. Remove from water with tongs and allow to cool and drain in a colander.
  3. Bring the water back to a boil.
  4. Heat oil in a large saute pan over medium heat and cook the sausage until browned, about 12 minutes.
  5. Add the chopped garlic and saute for a minute more.
  6. Add the drained broccoli rabe and toss to coat everything in the flavored oil.
  7. Add 1 cup reserved broccoli rabe water and salt and pepper to taste.
  8. Meanwhile, add the pasta to the boiling water and cook until al dente (about 10 minutes)
  9. Drain pasta and return to the pot.
  10. Add the broccoli rabe and sausage sauce to the pasta and toss.
  11. Transfer everything to a serving plate and sprinkle the Parmesan cheese on top.

Recipe: Simple Pasta Salad

It's been a REALLY hot Summer so far and one does not want to cook in such weather.
I came up with this recipe using grocery items I saw on sale at the local supermarket this week.
These are the prices for the America's Choice brand which I find just as good as national brands.

Frozen boxed vegetables (10 oz.) are on sale for 99¢ each.
16 oz. box of dried pasta is 80¢
8 oz. block of cheese is $1.50
16 oz. bottle of salad dressing $1.50

Ingredients

  • Half of a 16 oz. box of shaped pasta such as Rotini, Rotelle, (or your favorite shape)
  • 10 oz. box of frozen mixed vegetables
  • 4 oz. of sharp cheddar cheese
  • 1 cup salad dressing (Italian, Caesar, Balsamic, Ranch, or your favorite)

Directions

  1. Bring a large pot of water to the boil and follow pasta manufacturer's direction on cooking the pasta shape of your choice.
  2. While pasta is cooking, dice up the block of cheese into 1/4" cubes.
  3. Add the box of frozen vegetables a few minutes before pasta is ready.
  4. When pasta is done, drain the pasta and vegetables. Add to a large bowl.
  5. Add the salad dressing and toss to coat. You want to cool down the pasta before adding the cheese.
  6. Add the cheese and toss again.
  7. Serve at room temperature or chilled.

Recipe: Tricolore Pasta with Zucchini, Onion, Tomato Sauce


I grew a huge zucchini this summer and was trying to figure what to do with it. The reason it was so huge was because I plucked most of the flowers to fry leaving a few left to mature into fruit.

I have this fascination with different pastas and shapes and spied Barilla's Tri Color Fiori (flower) on sale for 99¢ at Pathmark recently. A box of pasta. A huge zucchini. A large bottle of tomato sauce in the pantry that I also bought on sale and a basket of onions. I decided to make a vegetarian dish for dinner tonight and interestingly enough, the color of the vegetables is echoed in the pasta.

Ingredients

  • 4 cloves garlic crushed (I used a garlic press but if you don't have one, mince it fine)
  • 1 large onion chopped
  • 2 zucchini diced
  • 3 tablespoons extra virgin olive oil
  • 1 cup tomato sauce
  • 1/4 teaspoon salt
  • few grinds of fresh cracked black pepper
  • 12 oz box of tri colored pasta (any shape you like)
  • Extra virgin olive oil
  • Grated Parmesan cheese


Preparation

1. Bring a large pot of water to the boil (this is for the pasta).

2. In a large skillet over medium flame, heat the olive oil for a few seconds and add the crushed garlic. Saute for a few seconds to perfume the oil and then add the chopped onion.

3. Saute until onion is soft (about 5 minutes) then add the diced zucchini. Saute for about another 5 minutes (I like my veggies to maintain their integrity and not be over cooked mush) and then add 1 cup tomato sauce.

4. Stir to incorporate everything together.

5. Finish with sprinkling of salt and pepper and set aside off heat covered. The vegetables will continue to cook slowly steaming under the cover.

This can be served by itself as a vegetable side dish.














By this time, the water has hopefully boiled and you can follow manufacturer's direction on cooking your pasta. When the pasta is done, drain and toss with the vegetable mixture.


Garnish with a drizzle of extra virgin olive oil on top and a handful of grated Parmesan cheese.

This dish serves 4.

Recipe: Fettuccine Alfredo with Broccoli and Shrimp


I was in the mood for something a little more "fancy" for dinner without much work and difficulty. I always stock up on pasta when it's on sale for 99¢ a box and stock up on frozen vegetables when they are on sale.
I decided that I would make fettuccine Alfredo since I had a bottle of Classico Alfredo sauce in my pantry. I wanted to bulk it up and make it more heartier so I looked in my freezer and found a bag of frozen headless shrimp that I had bought when it was on sale. "That would be perfect!" I thought and then turned towards the freezer door and spied a box of frozen broccoli florets. "I'll add that as well to make it healthier".

This makes 4 servings in my household for dinner. Figure 5 shrimp per person.

Ingredients

  • 1 16oz. box of fettuccine noodles
  • 1 15oz. jar of Classico Alfredo sauce
  • 1 10oz. box of frozen broccoli florets (thawed)
  • 20 pieces frozen shrimp (thawed and shelled)
  • kosher salt
  • freshly ground black pepper

Directions

  1. Bring a large pot of water to a boil for the noodles. When water comes to a boil, add two handfuls of kosher salt. Bring water back to a boil.
  2. Put broccoli florets into the boiling water and allow to cook for 2 minutes. Remove from water with a large sieve. Set aside in a bowl.
  3. Put shrimp into the boiling water and allow to cook until pink. Remove from water with a sieve. Set aside in a bowl.
  4. Add fettuccine to the boiling water and cook following manufacturer's directions.
  5. While noodles are cooking, empty the car of Alfredo sauce into a 12" saute pan. Put some of the pasta water into the jar and swirl around to get all the sauce out of the jar. Add to the pan.
  6. When pasta is done, strain and toss into the saute pan with sauce. Add the cooked broccoli and shrimp and toss all together until fully coated. Add the pepper and toss again.
  7. Serve.
